There are two laws at play here in Utah on this:

76-10-504. Carrying concealed dangerous weapon <http://le.utah.gov/~code/TITLE76/htm/76_0C033.htm> prohibits carrying a concealed weapon.

76-10-505. Carrying loaded firearm in vehicle or on street. <http://le.utah.gov/~code/TITLE76/htm/76_0C034.htm> prohibits carrying a "Utah loaded" firearm in or on a vehicle.
With a valid CCW permit you are legal to carry a firearm on your ATVs either loaded or not, concealed or not. Without a valid CCW, make sure the firearm is not concealed (either in plain view or securely cased, need not be locked), AND that is is not "loaded" as per Utah definition in 76-10-502.
Off topic to guns, but perhaps of relevance to you, last I heard, Utah was NOT honoring the OHV/ATV registration of other States. So if you are brining ATVs with you, you will need to get a temporary Utah registration for them to avoid risking a ticket for unregistered vehicles. I know, it sucks.
