Question concerning a posted "firearm free" zone

Hello to all! I've been reading all of the posts relevant to Tennessee OC and CC with much interest, and I have a question or two for those more experienced:

1. If a place of business has appropriate signage restricting firearms, can the owners and or the employees of the establishment go armed inside the building? More simply put, can the clerk of a legally restricted business keep a firearm under the counter?

2. Could someone tell or inform me where I might find out what constitutes a valid "no firearms" sign and where it must be placed at the entry to be considered valid?
