I haven't missed the Cochon de lait in quite a few years. Saturday they'll have these to go box plate lunches stuffed with Roasted Pig and Jambalaya that are so big it take two grown men to finish a plate. Man i can't WAIT !

What is Cochon de Lait?

Suckling pig (or sucking pig ) is a young pig that has only fed on its mother's milk. The piglet is killed between the ages of two to six weeks, and traditionally it is roasted. The dish is usually reserved for special occasions.
Starting on Saturday enjoy a plate of Cochon de Lait, with over 4 tons being cooked over the weekend don’t miss out on this delicious dish.

The last cochon de lait I had was right next door in Marksville. Gooooooood stuff!

When I lived in EBR Parish, we held one in a cul de sac where I lived. Put a pig twixt rebar with pit dug underneath and an old car hood over it to concentrate heat.

Up all night and partied all day.:dude:

Seeing how they're selling and consuming LOTS of beer on premises, I guess OC'ing is not such a good idea.....................
The wife and I are going to ride there early Saturday morning, unless someone knows of a reasonably priced bed and breakfast nearby................

Well have fun. My mom was diagnosed with s staff infection, and my littlest one is sick from her 6 month shots. So we called off the whole thing:(

I'm going fishing saturday with my Dad and Son.

To avenge myself for not being in Mansura, I just threw a brisket in the smoker, and will be up all night tending it. I'll also throw in a hank of hot links in the morning. My union is hosting an employee dinner Saturday, with 15 briskets and a roast hog.

just found out that I don't have to work tomorrow, so I will be able to show up. Hope to see some of you guys/gals there, and enjoy some good food. Is there a place that we could all meet up at in the festival so we don't all miss each other?
